The practice of tipping began in Tudor England. In medieval times, tipping was a master-serf custom wherein a servant would receive extra money for having performed superbly well. It took hold in the States during the “Reconstruction Period” after the Civil War when some hospitality companies started using freed slaves in their establishments. They paid very low wages and encouraged patrons to leave tips for good service.
Until recently, that model has basically stayed intact. Whether right or not, that was how it worked… until wages started to rise, so did food prices. credit card fees were added to bills, the pandemic hit and tips seem to be expected by almost everyone that’s near food and wait a minute… everything is going up except MY PAY. We grew up thinking that we knew what tipping was. Either tipping or we have lost our way!
