Like any other business, inflation hits a restaurant in many ways. There’s rising labor costs, there’s the ever-inflating egos of some diners who have taken McDonalds old motto, “Have it your way” to a level of “Have it MY way or the BYE way”.
Smart restaurateurs have adapted to labor by closely watching hours and cross training staff to help others in the team and turning to AI. They’re dealing with ever demanding diners by placing “No Substitutions” on their menus, charging for changes or just gritting their teeth, smiling and baring it. Then there’s the third kind of inflation. Food Inflation.
Food inflation is counter to everything that we hear on the news. “Inflation has slowed”. “Material prices are down”. Then why is my restaurant bill still so high? Why is the Skirt Steak that was $5.99 per lb. 5 years ago now $30 per lb? Why is a plain, uncut bagel almost $2 each? How can the restauranteur who is just getting by charge more when his patrons just getting by themselves. What can they do?
