In this episode, we follow Chloe Vichot, founder of the eco-friendly café Ancolie in Manhattan’s Greenwich Village. Vichot, a former financier, raised over $50,000 on Kickstarter to raise money for her “epicurean cantine.” From a young age growing up in Paris, France, Vichot learned about consuming food in moderation and purchasing ingredients from her local market. The food at Ancolie is sourced from the Union Square Market and served in reusable glass jars.
Vichot’s mission for Ancolie is to educate people on sustainability. By using reusable products at Ancolie, Vichot says, “I want to make sure that we leave a decent planet to our kids and the generation after us.” Vichot’s story is a unique balance and demonstration of personal fortitude and community commitment.
