The pandemic has brought an increased focus on maintaining clean and sanitary spaces. The challenge for operators now becomes how to meet those needs with a smaller staff.

One of the ways to meet those needs is by using advanced cleaning products that help remove grease and other materials that bacteria grow on before treating a surface with disinfectants. To help satisfy the needs that restaurants are facing, P&G Professional has launched an updated suite of cleaning solutions for commercial use.

“Cleaning has always been super important, in the Technomic rankings for restaurants and food although important ranked second over the past couple of years. During the pandemic cleaning kind of took over that number one spot, now I think we’re back to being number two,” said P&G Professional North American Vice President, Paul Edmondson. “One thing is for sure that both guests and employee expectations have been raised from where they were before the pandemic which, when you couple that with the challenging environment that restaurants are operating in whether it be labor shortages, increased food costs, equipment supply chain issues, creates several difficulties. Our take on cleaning is that it has never been more important that the products are safe. With labor issues, they need to be part of a simple to execute program that is driven by superior product performance and benefits all aspects of your restaurant.”

With their new line of Dawn Professional products, P&G is focused on simplifying the cleaning process as well as working to relieve possible cleaning related tensions in a restaurant environment.  “My three pieces of advice to help simplify cleaning, begins with the fewer products that you can have in your restaurant the better,” said Edmondson. “The second thing would be easily identifiable products, for us that means brand names. The third piece of advice is getting the job done right the first time and with as little effort as possible.”

Edmondson continued, “P&G as a company has really doubled down on understanding tensions, while we in the P&G professional department have focused on the tensions in a restaurant. For example, launching Dawn Professional Wipes, helps meet the need to quickly clean and disinfect a surface. During the pandemic we have focused on killing bacteria while the rest of our lineup is focused on grease removal, and we have found that grease removal is a key part of sanitization as viruses and bacteria feed on the grease. We at P&G Professional know that you have to absolutely do a great job cleaning with grease removal being a part of that and then coming behind and disinfecting.”

For those wondering what some of the Dawn Professional products are capable of, Edmondson has the answer. “Our Dawn Professional Pot and Pan is our work horse product that can be found in many restaurants. Its primary use is in a three compartment sink because of its great suds mileage which means that you don’t have to change the water out as frequently as you would with other soaps.” Edmondson continued, “in keeping with maintaining a clean and sanitary environment we have also developed a Heavy Duty Floor Cleaner. This cleaner sticks to the Dawn name and is very good at cutting through grease, making it extremely useful in the back of the house. In keeping with products that are great at cutting through grease we also have launched our Platinum Powerwash Dish Spray and Power Dissolver, which are both great for cleaning utensils, pots and pans.”

In addition to making it easier to do more with fewer employees, the Dawn Professional Line can also help restaurants attract new employees. “The brand name power is definitely more important than it has been in the past,” said Edmondson. “Obviously, guests want to know what a company is using but so do employees. When an employee walks into a restaurant and sees the same brands that they trust to clean their own home, that employee would feel better working there. It creates an environment where the employees know that their employer is only giving them the best products and can help with their engagement and loyalty to the location.”

In addition to creating effective cleaning products, P&G is also working to make sure those products are sustainable. “Sustainability is core value at P&G. We try to look at sustainability across the whole spectrum,” said Edmondson. “For example, our Pot and Pan cleaner, is able to hold up in the sink longer meaning you don’t have to drain ten gallons of hot water and pay for another ten gallons. We see operating value and sustainability as completely linked. It’s a great result for the customer, you are not only using less labor to get the job done, but you are also using less water and energy which helps reduce the carbon footprint.”
