Executive Chef’s Black Truffle Arepa Was Winner at 2017 Forbes 30 Under 30 Summit Food Festival
Chef Kelvin Fernandez — recent winner of the “People’s Choice: Best Savory Dish” award at the annual Forbes 30 Under 30 Summit Food Festival — has brought his culinary talents and flavorful vision to Marriott Vacation Club Pulse, New York City as the vacation ownership property’s new executive chef.
As a kid growing up in Queens, becoming a world-renowned chef never entered Kelvin Fernandez’s mind. But it was a Long Island City High School cooking class—a class he took on a whim to impress his girlfriend—that helped him discover his passion and skills.
Today, Chef Fernandez is a graduate of The Culinary Institute of America, French-trained, a two-time winner at the Forbes 30 Under 30 Summit Food Festival, NYC’s youngest executive chef, runner up on Food Network’s “Chopped,” and winner on both FYI Network’s “Man vs. Child” and Food Network’s “Beat Bobby Flay” show.
Just a few weeks ago, Fernandez’s black truffle arepa with mushroom duxelle parmegianno reggiano was awarded the “People’s Choice: Best Savory Dish” at the Forbes 30 Under 30 Summit Food Festival in Boston.

In his role as executive chef at Marriott Vacation Club Pulse, New York City, Chef Fernandez oversees all the property’s culinary operations, including its two dining outlets, the Strand Bistro, featuring seasonal, modern American cuisine with Latin influences, and the iconic Top of The Strand lounge, widely recognized as one of the best rooftop bars in the world.
“I’m looking forward to creating amazing food that fuses layers of flavors with different textures,” Chef Fernandez said. “That’s what makes a dish exciting, from the first bite to the last.” Crispy arepas made with braised beef short rib, creamy avocado and lime-scented sour cream are one of his favorite creations on the menu. “When I figured out that I wanted to do an arepa, I knew that I wanted to do something different. They’re inspired by my Dominican roots. It’s a Colombian recipe with a Dominican twist.”
Sample Chef Fernandez’s signature dishes at the Strand Bistro, open daily for breakfast and dinner, and at Top of the Strand rooftop bar, open daily at 5 p.m. Both are located at 33 West 37th Street, between 5th and 6th Avenues.
